History
Ube is the ingredient in ube halaya or halayang ube, a Filipino dessert made from boiling and mashing purple yam (also spelled halea, haleya; from Spanish jalea “jelly”). The primary ingredient in ube/purple yam-flavored pastries and ube ice cream is ube halaya. Additionally, it can be added to other desserts like halo-halo. It is also known by its original native name, nilupak na ube.
Purple yam that has been peeled, boiled, grated, and mashed is the main ingredient. The mashed yam is added to a skillet with melted butter or margarine along with condensed milk (which was originally sweetened coconut milk). Stirring the mixture thickens it. After the liquid thickens, it is cooled and poured into different-shaped containers or set on a dish.
Ube halaya is usually served cold, having been refrigerated beforehand. Condensed milk, latik, or browned grated coconut are optional toppings.
