History

Biko is a common dessert in the Philippines, and its origins are a mystery to most, however it most likely originated in China, where rice was first domestically grown.

Biko is a Filipino sweet rice cake. Sticky rice, brown sugar, and coconut milk are the ingredients. Usually, latik (either the syrupy caramel-like variety or the coconut curds) is placed on top. It is made similarly to kalamay, with the exception that the rice grains aren’t mashed into a paste. Occasionally, they are packed and marketed as suman.
